Ingredients
• 2 ¼ cups rolled oat
• 2 cups finely shredded carrots
• 2 tsp ground cinnamon
• 1 cup finely chopped dates
• 2/3 cup shelled pumpkin seeds
• ½ cup raisins
• 2/3 cup coconut flakes
• water
Directions:
• Stir together the oats, carrots, cinnamon, dates, pumpkin
seeds, raisins and coconut flakes in a large bowl
• Add water, one TBSP at a time, as needed for shaping
consistency
• Form the dough into 24 heaping tablespoon-sized balls
• Refrigerate at least 1 hour before eating
